Lemon cookies and lemon cheesecake filling fight to star in this parfait.

Crushed lemon cookies are layered with lemon cheesecake filling to create this amazingly sweet-tart treat. Let your children help you crush the cookies and assemble this easy dessert!

Lemon cookie crusted lemon cheesecake parfaits

Serves 4


  • 24 lemon sugar cookies (or lemon shortbread cookies)
  • 1 (8 ounce) package softened reduced-fat cream cheese
  • 1 lemon, zested
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons powdered sugar
  • 2 cups homemade whipped cream
  • Raspberries for garnish


  1. Place the cookies in a zip-top bag, and using a rolling pin, lightly crush the cookies.
  2. In a bowl, combine the cream cheese, lemon zest, lemon juice and powdered sugar.
  3. Stir in about 2 tablespoons of the homemade whipped cream into the cream cheese mixture.
  4. In a parfait or wine glass, layer the cookie crumbs in the bottom, next add the cheesecake filling and then the homemade whipped cream.
  5. Repeat the layers and top with raspberries for a colorful garnish.
