Southwest salad with creamy lime dressing

A healthy salad (and dressing) is just minutes away, whenever you want it! This recipe uses plain Greek-style yogurt as the base for its dressing, taking things to a healthier side. Toss your favorite ingredients into the salad — think grilled chicken, diced celery, onion or red pepper strips — then top with the creamy lime dressing. Serve with a warm soup and some chips on the side for a great meal!

Southwest salad with creamy lime dressing

Serves 3

Ingredients:

  • 4-6 ounces mixed salad greens, divided
  • 1 avocado, peeled and diced
  • 4 ounces black beans (drained and rinsed if using canned)
  • 4 ounces corn kernels (drain if using canned)
  • 12 cherry tomatoes, cut in half
  • 1 green onion, diced
  • 1/3 cup Greek-style plain yogurt
  • 3 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon white sugar
  • 1/4 teaspoon salt

Directions:

  1. Divide the salad greens on individual plates.
  2. In a small bowl, mix together the yogurt, lime juice, zest, salt, sugar and green onion. Mix well and adjust the seasoning as needed. Note: If the lime flavor of the dressing is too strong for you, add about a 1/2 tablespoon of milk to help dilute the flavor and mix well.
  3. Evenly divide the black beans, corn, tomato slices and avocado to top the salad greens, and top with the dressing.
