Pumpkin turkey chili recipe

Serves 2 - 4

  • 1/2 medium yellow onion, roughly chopped
  • 1 medium green bell pepper, roughly chopped
  • 1 to 2 cloves garlic, pressed
  • 1 pound ground turkey
  • 1 tablespoon Worcestershire sauce
  • 1 (15 ounce) can pumpkin purée (un-spiced)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken stock, warmed in the microwave
  • 10 drops liquid smoke
  • 1-1/2 tablespoons chili powder
  • 1/2 teaspoon black pepper
  • Salt and pepper to taste

  1. Spray a large pot with cooking spray and over medium heat, sauté the onions, bell peppers and garlic until the peppers are softened and the onions become translucent.
  2. Increase the heat to medium-high and add the ground turkey and Worcestershire sauce. Cook until the turkey is browned. Do not drain.
  3. Add the chicken stock, pumpkin purée, tomatoes, chili powder, liquid smoke and pepper and simmer for about 5 minutes (longer for thicker chili).
  4. Garnish with the cheddar or mixed cheese, fresh bell pepper slices and sour cream.
