Sweet cherry tomatoes and fresh chicken make this one-skillet dinner something special that the entire family will love.

Serves 4

Garden cherry tomato and chicken one-skillet dinner

Ingredients:

  • 4 (6 ounce) chicken breasts
  • 15 ounces fresh cherry tomatoes, washed
  • 1 (0.6 ounce) packet Italian dressing mix
  • 2 tablespoons olive oil
  • 1/2 red onion, chopped

Directions:

  1. Preheat your oven to 400 degrees F.
  2. In a large oven-safe skillet mix together the olive oil, cherry tomatoes, chopped red onion and the full packet of Italian dressing mix.
  3. Heat the skillet over medium-high heat until the cherry tomatoes start to burst.
  4. Gently nestle each chicken breast into the tomato mixture.
  5. Place in oven and cook for 20-25 minutes until the chicken is completely cooked through.
  6. Let the contents of the skillet cool for about 5-10 minutes to let the juices redistribute.
  7. Serve it hot.
