Chocolate dipped key lime pie pops

Makes 10 key lime pie pops

These are the perfect frozen treats to make for cooling off on hot days. A smooth, creamy pop everyone will love, and they are super simple to make. So if a trip to the Florida Keys is not in your budget, bring the Florida Keys to you and enjoy one of these delightful key lime pies on a stick.

Ingredients:

  • 1 cup Cabot vanilla bean Greek yogurt
  • 1 (14 ounce) can sweetened condensed milk (fat free can be used)
  • 3/4 cup to 1 cup key lime juice (use 1 cup for full, tart flavor)
  • Graham cracker crumbs for topping
  • Lime zest for topping
  • 2 cups chocolate chips (optional)
  • Dixie paper cups
  • Popsicle sticks

Directions:

  1. Place 10 cups in a muffin pan. Put about 1/2 teaspoon of graham cracker crumbs on the bottom of each cup.
  2. Mix the yogurt, condensed milk and key lime juice in a bowl.
  3. Using an ice cream scoop, scoop the mixture into the cups. (One full ice cream scoop per pop.)
  4. Sprinkle about 1 teaspoon of graham cracker crumbs onto each mixture. Put it in a freezer for about 30 minutes, then insert the sticks. Return it to the freezer for 3 hours.
  5. If you decide to dip them in the chocolate, melt the chocolate chips in a microwave, stirring to melt all of the chips, and allow it to cool.
  6. Remove the paper cup wrapper, then dip the Popsicle into the chocolate, and return it to the freezer to set, about 15 minutes.
  7. For plain pops, remove the cup wrapper, then sprinkle additional crumbs on top and sprinkle some lime zest on top for garnish. Enjoy!
