Wondering what to do with all of that summer squash and zucchini that is so plentiful this time of year? Look no further than this tasty summer squash cheese bake recipe that is the perfect side dish to any summer meal.

Serves 4-6

Ingredients:

  • 1 medium zucchini
  • 1 medium summer squash
  • 1 (15 ounce) can stewed tomatoes
  • 1/2 cup shredded mozzarella cheese

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Thinly slice the zucchini and summer squash crosswise into 1/8-inch slices.
  3. Arrange the zucchini and summer squash slices in a casserole dish, alternating between zucchini and summer squash.
  4. Place the stewed tomatoes randomly throughout the pan in between the zucchini and squash slices.
  5. Pour the liquid from the stewed tomatoes over the dish.
  6. Top with 1/2 cup of shredded mozzarella cheese.
  7. Cover with aluminum foil and bake for 20-25 minutes until the vegetables are tender and the cheese has melted.
