Summer squash cheese bake

Summer squash cheese bake
Serves 4-6
Ingredients:
- 1 medium zucchini
- 1 medium summer squash
- 1 (15 ounce) can stewed tomatoes
- 1/2 cup shredded mozzarella cheese
Directions:
- Preheat the oven to 400 degrees F.
- Thinly slice the zucchini and summer squash crosswise into 1/8-inch slices.
- Arrange the zucchini and summer squash slices in a casserole dish, alternating between zucchini and summer squash.
- Place the stewed tomatoes randomly throughout the pan in between the zucchini and squash slices.
- Pour the liquid from the stewed tomatoes over the dish.
- Top with 1/2 cup of shredded mozzarella cheese.
- Cover with aluminum foil and bake for 20-25 minutes until the vegetables are tender and the cheese has melted.
