3 Peanut butter cookie recipes
These three unique peanut butter cookie recipes offer a new twist on an old family favorite!

Peanut butter cup cookies
Makes 3 dozen cookies
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 36 mini peanut butter cups
Directions:
- Preheat the oven to 350 degrees F.
- Cream together the butter, peanut butter and sugars.
- Add in the eggs, vanilla extract and baking soda and mix until they are well combined.
- Slowly mix in the 2 cups of the flour until it is well incorporated.
- Press 1 tablespoon of the batter into each well of a mini-muffin tin. Bake for 8 minutes, until the cookies begin to rise but are still soft in the center.
- Take the cookies out of the oven and press a mini peanut butter cup into the center of each cookie, making sure the top is level with the top of the cookie.
- Bake for an additional 4 minutes until the cookies are golden brown.
- Remove from the oven and allow to cool completely before taking the cookies out of the muffin tin.
Peanut butter cookie bars with Nutella frosting
Makes 12 bars
Ingredients:
- 1 cup butter, softened
- 1-1/2 cups chunky peanut butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 2 cups quick oats
Nutella frosting:
- 1-1/2 cups Nutella
- 1/2 cup powdered sugar
Directions:
- Preheat the oven to 350 degrees F.
- Cream together the butter, peanut butter and sugars. Beat in the two eggs, then add in the vanilla, baking soda and salt.
- Slowly add in the flour and quick oats until all of the ingredients are well combined.
- Pour the batter into a 9 x 13-inch baking dish and bake for 12-15 minutes until the top is golden-brown.
- Make the frosting by mixing together 1-1/2 cups of the Nutella and 1/2-cup of the powdered sugar. Heat the frosting in the microwave for 20-30 seconds and then pour over the top of the peanut butter crust.
- Allow to cool, then slice and serve.
Peanut butter Nutella cookies
Makes 3 dozen cookies
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup granular sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 1/2 cup Nutella
Directions:
- Preheat the oven to 350 degrees F.
- Cream together the butter, peanut butter and sugars.
- Mix in the egg, vanilla extract, baking soda and salt. Slowly add in the flour and mix until well combined.
- Gently stir in the Nutella using a rubber spatula until it is swirled throughout the dough.
- Round the dough into 1-1/2-inch balls and place them on a baking sheet. Flatten with a fork and bake for 10-12 minutes until the cookies are golden brown.
