Grilling season is in full swing, but that doesn't mean that your diet has to consist of just meat. There are many delicious and meat-free ways to make a burger. Expand your summer menu with these three meatless burger recipes!

Quinoa sweet potato burger recipe

Quinoa sweet potato burger recipe

Makes 6 burgers

Ingredients:

  • 2 medium sweet potatoes, peeled and cubed
  • 3/4 cup cooked quinoa
  • 1/4 cup onion, finely diced
  • 1/4 cup corn
  • 1/4 cup breadcrumbs
  • 2 cloves of garlic, minced
  • 2 tablespoons barbecue sauce
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Directions:

  1. Boil a large pot of water on the stove. Once boiling, add the cubed sweet potato to the pot and boil for 20-25 minutes until the sweet potato is tender. Put the sweet potato in a large bowl and mash with a potato masher. Add in the cooked quinoa and mix.
  2. Stir in the onion, corn, breadcrumbs, garlic, barbecue sauce, cumin and salt. Mix until well combined.
  3. Divide the mixture into six equal portions and form into patties.
  4. Cook on the stove top or the grill until both sides are browned and the burger is warmed through.

Black bean burger recipe

Serves 4

Ingredients:

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup yellow corn kernels
  • 1/2 cup thinly sliced green onions
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup breadcrumbs

Directions:

  1. Place all ingredients except the breadcrumbs in a food processor. Pulse the food processor 8-10 times to combine ingredients.
  2. Transfer the ingredients to a bowl and refrigerate for 1 hour.
  3. Stir in the breadcrumbs and form the mixture into four burger patties.
  4. Cook the burger patties on the stove top or the grill for approximately 5 minutes on each side, until the burger is cooked through.

Lentil vegetable burger recipe

Serves 4

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1/4 cup finely chopped onion
  • 1/4 cup grated carrots
  • 2 cloves minced garlic
  • 3 cups cooked lentils
  • 1/2 cup breadcrumbs
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a medium skillet over medium-high heat. Add in onion, carrot and garlic and sauté until vegetables are tender.
  2. Allow the vegetables to cool and transfer to a food processor. Add the cooked lentils to the food processor and pulse for 10-15 seconds until ingredients are well combined.
  3. Transfer the ingredients to a bowl and stir in the breadcrumbs, cumin, paprika, salt and pepper.
  4. Divide the mixture into four even portions and form burger patties.
  5. Cook the burger patties on the stove top or grill until browned on both sides and the burger is cooked through.
