Curry marinated grilled fruit salad
Bring out the best flavor in your summer fruit by doing the counterintuitive: grilling it! Strawberries taste more like strawberry, pineapple tastes sweeter and melons get even better. Add a curry-flavored dressing to bring out even more flavor.

Curry marinated grilled fruit salad
Ingredients:
- 1 whole pineapple
- 1 whole cantaloupe
- 4 nectarines
- 1 pint strawberries
- 1 cup blueberries
- 2 tablespoon lemon juice
- 1 tablespoon vegetable oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon curry powder
- Pinch of salt
Directions:
- In a large bowl whisk together the lemon juice, oil, mustard, honey, curry powder and salt. Set aside.
- Peel, quarter and core the pineapple, leaving the quarters in tact before grilling.
- Peel, quarter and core the cantaloupe. Cut the quarters in half lengthwise.
- Cut the nectarines into quarters.
- Wash and hull the strawberries.
- Wash the blueberries.
- Toss the pineapple, cantaloupe and nectarines in the lemon juice mixture.
- Preheat a grill or grill pan to about 400 degrees F.
- Place all of the marinated fruit on the grill and cook for 3-4 minutes on each side to get good grill marks.
- Meanwhile place a sheet of foil on the grill and roast the strawberries until the juices start to run.
- Remove all of the fruit from the grill. Cut the pineapple, cantaloupe and nectarines into 1-inch chunks.
- Toss with the remaining marinade while it is still warm.
- Add the strawberries and blueberries and toss together.
- Refrigerate until ready to serve.
