Forget about the drive-through when you’re in need of a quick dinner. This recipe for breaded fish sandwiches is quick to put together and has a great taste -- no frying required.

Sometimes the drive-through can be tempting with its notion of meals-in-a-jiffy. Save that for when you really don’t have any options, or you’re truly on the go. If you have just about half an hour to spare, this recipe will be sure to please! No frying means no mess (and not as much fat) -- and the family can sit together to enjoy this great-tasting meal. Serve it with a fresh green salad or baked potatoes for a complete meal.

Ingredients:

  • 1 pound fish fillets, about 1/2-inch thick
  • 1/2 cup panko bread crumbs
  • 4 single slices of cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 4 sandwich buns of your choice
  • Nonstick cooking spray
  • Lettuce and tomato slices for garnish
  • Tartar sauce for garnish

Directions:

  1. Preheat your oven to 350 degrees F. Spray a shallow baking pan with nonstick cooking spray and set aside.
  2. Use a shallow dish and mix together the bread crumbs and seasonings.
  3. Use a separate shallow dish to whisk together the egg, lemon juice and water.
  4. Pat the fillets dry with a paper towel and cut them into sandwich-sized portions.
  5. Dip each piece of fish in the egg mixture first (allow the excess to drip off), then in the bread crumb mixture. Gently pat the bread crumbs in place and place the fish in the baking pan.
  6. Bake for about 10-15 minutes or until the fish flakes when pricked with a fork.
  7. Just before the fish has finished cooking, split the buns in half and arrange them on a baking sheet. Place a slice of cheese on the bottom half of each bun. Arrange the top half of the buns with the top side up.
  8. Allow the buns to stay in the oven, just until the cheese begins to melt and the buns are slightly toasted.
  9. Remove and add a piece of fish to each bottom half of bun with cheese.
  10. Serve with lettuce and tomato and tartar sauce.
