Fiesta salad recipe
If your family loves Tex-Mex but you’re not a fan of the fatty ingredients, you can give your family the flavor they love with this delicious salad. Taco meat made with ground turkey, lower-fat cheese and baked tortilla chips make this hearty salad something you can serve your family weekly.

Making interesting salads is one of the best ways to keep your family eating healthy without hearing the dreaded, "Again, mom?" This delicious Tex-Mex-inspired salad combines your family's favorite Mexican-style ingredients -- no dressing required!
Ingredients:
Taco Meat
- 1 pound ground turkey
- 1/4 cup onions, diced (optional)
- 1 packet taco seasoning
- 3/4 cup water
Rice
- 2 cups instant rice, uncooked
- 2 cups water
- 1/4 to 1/2 teaspoon garlic powder
- 1 small handful cilantro, chopped
- Salt to taste
Rest of Salad
- 4 to 6 leaves romaine lettuce, chopped
- 1 to 2 Roma tomatoes, diced
- 3/4 cup 2 percent milk cheese (taco blend if available)
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- 8 to 24 baked corn tortilla chips (as desired)
- 1 small can (4.25 ounce) black olives (optional)

Directions:
- Over medium heat, cook onions until just translucent.
- Add ground turkey, turn heat up to medium-high and brown.
- Stir in 3/4 cups of water and taco seasoning and bring to a boil.
- Reduce the heat and simmer for about 5 minutes.
- Meanwhile, combine rice and 2 cups of water in a microwave-safe dish.
- Add garlic powder, cilantro and salt and microwave on high for 5 minutes or until water is absorbed.
- To create the salad, spoon rice and taco meat (about a quarter of each) into a bowl.
- Top with lettuce, tomatoes, cheese, black beans and olives.
- Line the bowl with two to six tortilla chips and garnish with two or three slices of fresh avocado.
- Serve with salsa if desired.
