You can only make so much egg salad. So you need to get creative when it comes to all those leftover hard boiled eggs from Easter. Deviled eggs are a fabulous idea, but don't make ordinary deviled eggs. Think outside the box with these unique recipes.

Hard-boiled Easter eggs

Pepperoni pizza deviled eggs

Serves 24

If your kids don't love plain deviled eggs, turn your leftover hard boiled eggs into little pizza creations.

Ingredients:

  • 12 hard boiled eggs
  • 5 tablespoons mayonnaise (use fat-free to cut calories and fat)
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • Turkey pepperoni
  • Parmesan cheese

Directions:

  1. Slice hard boiled eggs in half lengthwise, carefully removing the yolks. Place the yolks in a bowl and smash them with a fork.
  2. Add mayonnaise, salt, pepper and garlic powder to the bowl, mixing with fork until creamy.
  3. Spoon yolk mixture into the center of each egg white. Top with mini (or chopped) pepperoni. Sprinkle with Parmesan cheese. You can also add diced scallions, mushrooms or other toppings if you please.

Chocolate deviled eggs

Serves 12

Chocolate goes with everything -- even hard boiled eggs. This recipe is adapted from the book Deviled Eggs: 50 Recipes From Simple to Sassy.

Ingredients:

  • 6 hard boiled eggs
  • 6 tablespoons unsalted butter, softened
  • 1-1/2 tablespoons crème fraîche
  • 3 teaspoon unsweetened cocoa powder
  • 2 tablespoons light brown sugar, firmly packed
  • Pinch of salt
  • Chocolate bar for garnish, grated

Directions:

  1. Slice hard boiled eggs in half lengthwise, carefully removing the yolks. Place the yolks in a bowl and smash them with a fork.
  2. Mix butter, crème fraîche, cocoa powder, brown sugar and salt into the yolks until creamy.
  3. Fill each of the egg halves with a spoonful of the mixture. Garnish with grated chocolate.

Spicy Mexican deviled eggs

Serves 24

Give your deviled eggs a little kick by throwing salsa into the mix.

Ingredients:

  • 12 hardboiled eggs
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup hot salsa
  • 1-1/2 tablespoons sour cream
  • 1/2 teaspoon cayenne pepper
  • 4 tablespoons scallions, diced

Directions:

  1. Slice hard boiled eggs in half lengthwise, carefully removing the yolks. Place the yolks in a bowl and smash them with a fork.
  2. Add the remaining ingredients except scallions to the bowl and mix until well combined.
  3. Spoon the mixture into the egg halves and garnish with scallions. Chill before serving.
