Give a healthy makeover to a favorite side and go-to afternoon snack: potato chips. Garlic sweet potato chips, rosemary beet chips and Parmesan zucchini chips add variety and bump up the nutrition factor while still being a kid-friendly accompaniment to your favorite meal.

Garlic sweet potato chips

Garlic sweet potato chips

Ingredients:

  • 2 sweet potatoes
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • Kosher salt

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Thinly slice the unpeeled sweet potatoes and place them in a large bowl.
  3. Mince 4 cloves of garlic and add to the bowl of sweet potatoes.
  4. Add in 2 tablespoons of olive oil and toss until the potatoes are well coated and garlic is evenly distributed.
  5. Place sweet potato slices in a single layer on a well greased cookie sheet and sprinkle with kosher salt to taste.
  6. Bake at 400 degrees F for 20 minutes, or until potato slices are crispy. Depending on your oven and thickness of your slices, you may need to increase or decrease baking time to achieve desired crispness.

Rosemary beet chips

Ingredients:

  • 2 medium beets, peeled
  • 1 teaspoon fresh rosemary
  • 2 tablespoons olive oil
  • Salt (optional)

Directions:

  1. Preheat the oven to 300 degrees F.
  2. Thinly slice peeled beets into large rounds.
  3. Toss beets in a large bowl with olive oil and rosemary.
  4. Place on a parchment lined baking sheet and bake at 300 degrees F for 20-25 minutes, keeping a close eye so that they do not burn.
  5. Sprinkle with salt if desired.

Parmesan zucchini chips

Ingredients:

  • 2 medium zucchini
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/3 cup freshly grated Parmesan cheese

Directions:

  1. Preheat the oven to 425 degrees F.
  2. Slice the zucchini into 1/4-inch slices.
  3. Combine the zucchini in a large bowl with the olive oil, garlic powder and Parmesan cheese.
  4. Place the zucchini slices on a well greased cookie sheet and bake for 25-30 minutes until the slices are golden brown.
