When Game Day rolls around, you want to enjoy it -- not spend it in the kitchen making complicated meals. Instead, fill up the slow cooker with a few simple ingredients and let it do all the work.

Slow cooker beef stew

Beefy slow cooker stew

Serves 6

Ingredients:

  • 2 pounds beef stew meat
  • 5 cups beef broth or stock
  • 1 cup red wine (something you'd be happy to drink!)
  • 1/2 pounds carrots, peeled and cut into 1-inch chunks
  • 2 pounds Idaho potatoes, rinsed and cut into 1-inch chunks
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Directions:

  1. Combine all ingredients, except the salt and pepper, in a slow cooker and stir well. Set the slow cooker to low and cook for 10-12 hours until the beef is fall-apart tender. Season with salt and pepper.
  2. Now, you can serve it just like this, or you can thicken it as you desireā€¦ your choice. I use a little cornstarch mixed with a little of the broth to thicken it ever so slightly.

Smoky slow cooker pulled pork

Serves 8

Ingredients:

  • 3 pounds pork roast
  • Kosher salt
  • 6 ounces can tomato paste, plus one can water
  • 1/4 cup molasses
  • 2 tablespoons liquid smoke
  • 2 tablespoons honey
  • Salt and pepper, to taste

Directions:

  1. Rinse and pat dry the pork roast. Salt well all over with kosher salt. Place into the slow cooker.
  2. In a medium bowl, whisk together the tomato paste, water, molasses, liquid smoke, honey, salt and pepper. Pour over the pork roast.
  3. Set the slow cooker to high and cook for 4-5 hours until fall-apart tender. Or cook on low for 8-10 hours until fall-apart tender.
  4. Pull the roast out and break apart with two forks into shreds. Return to the slow cooker and stir with the sauce. Serve. Store leftovers in the fridge for up to 5 days.

Slow cooker meat-lovers chipotle chili con carne

Serves 4

Please note: the recipe calls for one chipotle chili in adobo. Do not use the whole can.

Ingredients:

  • 2 pounds beef stew meat (in chunks)
  • 1 red onion, finely chopped
  • 3 cloves garlic, minced
  • 1 chipotle chili in adobo, plus 1 teaspoon sauce, finely chopped
  • 1 (20 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 3/4 cup water
  • 1 teaspoon cumin
  • Salt and pepper
  • Garnish: avocado, cheddar cheese, sour cream

Directions:

  1. Combine the stew meat, red onion, chipotle, crushed tomatoes, tomato paste, water, cumin, salt and pepper in the bowl of a slow cooker. Stir to combine.
  2. Set slow cooker to low and cook for 8-10 hours, until the meat is fall-apart tender. Serve, garnished with cheese, sour cream and/or avocado chunks.
