Tired of tried and true pasta sauces? These three variations on plain sauce will add some flavor to your next family pasta night.

Mom making pasta sauce

Olive oil, garlic and parmesan

This quick sauce works well with angel hair, spaghetti or linguini noodles. The recipe measurements are ideal for 1/2 pound of pasta -- 1/2 a box - you can adjust as needed.

Ingredients

  • 1 cup extra virgin olive oil
  • 6 garlic gloves, minced
  • 1/2 cup shredded parmesan cheese

Directions

  1. Heat olive oil in deep skillet over medium heat.
  2. Add garlic. Saute for 1 minute or until garlic is soft, cooked, but not too brown.
  3. Stir in parmesan cheese.
  4. Pour over hot, cooked pasta -- or add the pasta to the skillet to mix in with the sauce.

Bolognese

This sauce takes more time to cook, but is perfect for a cold winter night. The thick, chunky sauce works well with ziti, penne or bowtie pasta.

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1/2 pound each ground beef and ground pork (tip: check the supermarket for "meatloaf" blend that includes 1 lb mixed together)
  • 1 28 oz can whole plum tomatoes, drained with juice reserved
  • 1 small onion, carrot and celery stalk
  • 3/4 cup dry white wine
  • 1 cup chicken stock or broth
  • 1 cup cream
  • salt and pepper to taste

Directions

  1. Heat olive oil in medium size saucepan or deep skillet over medium heat.
  2. Add the vegetables and cook for about 7 minutes or until soft.
  3. Add the ground beef and pork. Cook for about 5 minutes or until any pink is gone.
  4. Add the tomatoes. Use a fork to gently crush them.
  5. Add the stock, tomato sauce, wine, salt and pepper and stir.
  6. Lower the heat, and simmer uncovered for 1 1/2 hours.
  7. Add the cream, heat for another 5 minutes.
  8. If needed, add more salt or pepper to taste.

Chunky tomato, olive and caper

This sauce works well with any shape of pasta.

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 15 oz can diced tomatoes with italian seasoning
  • 1 small jar capers, drained
  • 1/2 cup black olives, chopped
  • 3 garlic cloves, chopped
  • salt and pepper to taste

Directions

  1. Heat olive oil over medium heat.
  2. Add garlic. Saute for about 1 minute or until soft.
  3. Add rest of ingredients.
  4. Cook for 5 minutes, stirring at least once.
