Simple suppers: Pizza

Who doesn't love a good pizza? Preparing your own at home is more cost-effective and quicker than going out. You can be as creative -- or as simple -- as you'd like. Make your meal even easier by using prepared pasta sauce and pizza dough. If you'd like more of a homemade touch, use the recipe below for a quick and easy pizza crust.

Homemade pizza crust

Makes one, 12-inch pizza crust.

Serves 4 people

Ingredients

  • 1 package (.25 ounces) of active dry yeast
  • 1 teaspoon of granulated sugar
  • 1 cup of warm water
  • 2-1/2 cups of bread flour
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dry Italian mixed herbs
  • 1 teaspoon of salt

Directions

  1. Preheat your oven to 400 degrees. In a medium bowl, dissolve the yeast and sugar in the warm water. Let the mixture stand until it's creamy (about 10 minutes).
  2. Stir in the flour, oil, garlic powder, Italian herbs and salt. Beat until the mixture is smooth. Let the mixture rest for 5 minutes.
  3. Lightly flour a flat working surface. Pat or roll the dough out into a round. Transfer the dough to a lightly greased pizza pan and carefully stretch out the dough to the edges.
  4. Spread your favorite pizza sauce and toppings onto the dough and bake until the crust is lightly golden (about 15-20 minutes)*.

*Adjust cooking time as needed based on pizza toppings.

Bacon and egg pizza

Serves 4 people

Ingredients

  • 8 slices of bacon, cooked
  • 4 plum tomatoes, sliced ¼-inch thick
  • 2 cups of shredded cheddar cheese
  • ½ teaspoon of ground black pepper
  • 2 eggs

Directions

  1. Preheat your oven to 500 degrees. Cook the bacon until crispy and set aside.  Arrange the tomato slices on the pizza dough, spread out evenly. Make sure to leave an empty space like a well, in the center of the dough to hold the eggs.
  2. Sprinkle the cheese on top of the tomatoes. Place the strips of bacon on top of the tomatoes and cheese, closer to the outside of the dough. Bake the pizza for about 3 minutes and remove from the oven. 
  3. Crack the two eggs in the center of the pizza, trying to keep them next to each other as much as possible. Sprinkle the eggs with the black pepper and return to the oven. Bake until the eggs are set and the crust is golden brown (about 10 minutes)*.

Prep time: 15 minutes

Very veggie pizza

Serves 4 people

Ingredients

  •  ½ cup of fresh, sliced mushrooms
  • ½ cup of red bell peppers, sliced thin and in strips
  • ½ cup of onion, sliced thinly
  • ½ cup of Greek olives, pitted and coarsely chopped
  • 2 cups of shredded mozzarella cheese 
  • 1, 16-ounce jar of your favorite prepared pasta or pizza sauce (use less based on your taste)

Directions

  1. Preheat your oven to 400 degrees. Spread the sauce onto the unbaked pizza crust. Spread ½ the mozzarella cheese on top of the sauce. Alternating the vegetables, spread them out evenly across the pizza. Add the remaining ½ cup of mozzarella cheese to the top of the vegetables. 
  2. Bake until the crust is golden and the vegetables are heated through (about 10 minutes)*.
