With tender chicken, vibrant bursts of citrus and pungent little capers, chicken piccatta is a restaurant-caliber dinner recipe that can easily be made at home. For the health conscious cook, ChefMom has pared down the fat and calories in this Healthy Chicken Piccatta recipe.

Healthy chicken piccatta recipe


  • 1/4 cup all purpose flour
  • Salt and freshly ground black pepper to taste
  • 4 boneless, skinless chicken breast halves, pounded to an even thickness
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1 small lemon, thinly sliced (do not peel)
  • 1 small lime, thinly sliced (do not peel)
  • 1 small orange, thinly sliced (do not peel)
  • 1/2 cup dry white wine
  • 2 tablespoons small capers, drained


  1. Combine flour, salt and pepper on a plate. Dredge chicken in flour, shaking off excess.
  2. In a wide, deep skillet over medium heat, heat butter and oil, occasionally swirling skillet until butter melts. Add chicken and cover skillet. Cook for 3 minutes. Flip and cook another 3 minutes.
  3. Add citrus slices, squeezing a few of them over the chicken (discard the juiced slices). Add wine, cover, and cook for 3 minutes. Flip and cook another 3 minutes or until chicken is cooked through.
  4. Transfer chicken to a serving platter. Add capers to the skillet. If sauce is thin, let it cook until it thickens. Pour citrus and capers over chicken to serve.
