Whole Wheat Penne with Vodka Cream Sauce

1 jar of prepared marinara sauce (or your own homemade favorite) 1 can diced tomatoes 1 cup vodka 1/2 cup heavy whipping cream 1 cup freshly grated Parmesan cheese, divided Whole wheat penne pasta cooked according to package directions Pour the marinara sauce and diced tomatoes into a blender and puree until smooth. Pour sauce into skillet with the vodka and simmer until sauce is reduced by 1/4. Stir frequently. As sauce reduces, TASTE to determine readiness - this sauce will be NO good until all of the alcohol fumes are cooked away. This takes approximately 40 minutes. Once sauce is reduced, stir in the cream and heat through. Stir in 1/2 cup of Parmesan cheese and continue heating until cheese is well blended with the sauce.
